green chilli and coriander.

Traditional baked Lasagne with a rich ragu’ and parmesan bechamel
Slow braised pork cheeks
18 hour sous-vide pork cheeks with a Jerusalem artichoke puree and a caper and lemon dressing
Funghi trifolati
Fresh local mushrooms simmered in garlic and white wine, lemon juice and
parsley and served with grilled bread
MAIN COURSE
Prime sirloin of Scottona beef
Well flavoured and moderately tender beef with no bones
Aromatic duck
Half an aromatic duck with a smokey chipotle glaze
Pan seared meagre
Fillets of fresh local meagre flavoured with lemon zest and flaked almond crust.
Oven baked aubergine
Stuffed with citrus and lemon quinoa and sauteed wild mushrooms.

Dark chocolate fondant
Oven baked chocolate sponge with a molten chocolate center served with clotted cream ice cream
